2/3 cup Norbu
3/4 cup olive oil
1/4 cup prepared espresso or instant coffee
1 cup gluten free flour
1/2 cup hazelnut meal
2 tsp baking powder
1. Preheat oven to 180°C and grease and line a cake tin.
2. Whisk eggs and Norbu together until very light and fluffy.
3. Add olive oil and coffee and mix until combined.
4. Add flours and baking powder and fold through to combine.
5. Pour into prepared cake tin and bake for 30-40 minutes until a toothpick comes out clean.
