Raw Mars Bar Slice
Serves: 8-16

Cooking time: 2 hours



Ingredients

BASE

·      1 cup Cashews

·      1 tbs Norbu

·      2 tbs coconut oil

·      1 tbs coconut cream

·      1 tsp vanilla essence

·      1 tbs desiccated coconut



CARAMEL

·      2 tbs tahini

·      ½ cup cashews

·      ¼ cup coconut oil

·      2 tbs Norbu

·      1 ½ tsp vanilla

·      ¼ tsp salt

Topping

·      100g Sugar free dark chocolate, melted



Method

1.     Soak the cashews in boiling water for at least 1 hour.

2.     Drain the cashews and then blend with the remaining base ingredients . Spread into a greased and baking paper lined 18x30cm slice tin and freeze for 1 hour.

3.     Blend caramel ingredients until smooth, adding extra salt to taste and pour over base. Remove to the freezer for at least 2 hours.

4.     Melt the chocolate in the microwave for 1-2 minutes, stirring at 30 second intervals.

5.     Pour and smooth the chocolate over the top of the caramel and refrigerate for at least 2 hours.

6.     Slice into 8 pieces for a large serving then slice these in half for smaller treats.
